Wine and cheese pairing 3
This week's first pairing was a 2023 Pardillos Malbec and blue cheese. For the wine by itself, it smelled sweet and fruity. I picked up a little bit of either bubblegum or vanilla but mainly black cherry. As for the taste, it wasn't super tannic but more acidic. It was pretty light with notes of blackberry and dark berries. The cheese by itself tasted a little bit tangy but very strong. Together, the wine brought out lots of tanginess in the cheese while the cheese gave the wine more sharpness and less sweetness. I loved both of these by themselves but together, paired very well. Next, I did a 2023 Domaine des Clos Godeaux Cabernet Franc and aged cheddar. The wine alone smelled very strong of yeast or bread. It had notes of apple and dark cherry with a little bit of plum. For its taste, I definitely got notes of bread and a little chalkiness. It was not super tannic, which I loved. As for the cheese, it tasted pretty tangy and a little bit smooth.
